I cooked a Creekstone boneless prime rib roast for my family yesterday. My stepdaughter lives literally 60 seconds down the road with my grandsons, Julian and Corbin. She's a charge nurse in the ER and worked (2) twelves prior, so we had our meal later in the day. I seared the roast in a CI skillet with whole garlic cloves and fresh rosemary then let cool and bagged for the sous vide set at 131° for 5 hours. During the wait, we ate crescent rolls filled with breakfast sausage, cream cheese and cheddar, pigs in a blanket, ranch oyster crackers, and bunco buns made with salty Virginia ham my Dad sent us from Padow's of Richmond. Drinks were mimosas, beer, Sprite to start then we leaned into red wine. The grands opened their gifts along with Cortney and Jules and we watched the Redskins and Lions games. I pulled the roast out at 6pm, rested 10 minutes, added some Holy Cow rub and did a quick broil in the oven set at 550° on all sides. We ate at 7pm. My boys (grands) love Papa Fritz's cooking and especially beef and RIBS. They weren't disappointed as you can see from the photos. Julian even helped with the carving. Christmas was an extra special one this year. For that, I am most thankful.

Side Note: Sides were fresh green bean casserole, deviled eggs (Corbin's favorite), mashed potatoes, broccoli (both boys love) and ecowper cheesy hash browns potato recipe. I really messed the latter up as Jules and I were co-working in the kitchen on sides, bad idea. I read 1TBS of garlic powder and a TBS of pepper. Nope, it was teaspoon. I like garlic and pepper so will be eating that casserole for a week straight 😅
