2,3,4,5 vs 6,7,8 or 123A

    2,3,4,5 vs 6,7,8 or 123A

    Cow has about 13 ribs. The chuck ribs, 4 bone ribs, are ribs 2, 3, 4 and 5.
    But the plate ribs, the short ribs are ribs 6, 7, and 8, but they are called 123A.
    Excuse Me, but I found this confusing.
    Turns out the number 123A is a specific cut code from the North American Meat Processors.
    Now I can order 123A cut and sound as if I'm in the know.

    There's a lot to learn about beef rib cuts: there are back ribs, ribeyes, short ribs, English cut, flanken cut, riblets, boneless short ribs.

        I have never had a McRib sandwich. Those who have and enjoyed them, I never want to hear again from them that par boiling ribs is a no no.
