    Oooh. That sounds delicious. Yeah the food is off the hook here. Totally inspiring. Ive decided im gonna make a mole to serve w my beef cheeks for thanksgiving for my non turkey protein. Haven’t made mole in years. Can’t wait.

      So, I assume you take the skin off before you cook lengua? When people in my friends or coworkers get a steer processed, I always take the organ meats and tongue. I grind them and use them as food for Ripley. The tongue always has the skin on and the papillae​; and it always makes me think that I would remove this if I was gonna cook for human consumption.

        Yep, you have to peel the skin off. I've heard this is done by boiling it first then making a very shallow cut down the tongue while it is hot and peeling it off in sections.

        Spin, it’s my understanding that you cook first, then peel off the skin. Apparently it peels right off whereas if you remove first you’ll end up taking too much meat.

        I had one last year and I loosely followed an old post on here somewhere..I'll see if I can locate it. I thought it turned out great chopped up and in tacos. It might have been even better if I didn't see what it looked like at first 😂
