    Went to Costco today...

    Had some room in the meat freezer so planned to buy a strip loin and cut up some N.Y. Strip steaks. With the rapid rise in beef prices the past couple years I try to squeeze out a little extra value wherever I can. I dug through a pile of 7 or 8 whole loins looking for the best end marbling I could find. At around $13 per pound I hoped to get something that looked close to prime. I cut the loin into 1.5 inch thick steaks that averaged around 1.25# each (plenty for the two of us to make a meal), with a yield of 11 steaks and about a half pound of end trim that will go into stir fry probably. Not bad for the times. I think it might look like prime grade to some...

          Excellent looking steak! Strips are my faves.

          I might have to start shopping around the big box stores for loins instead of the online vendor I love. They haven't had any sales in an awfully long time after their prices shot up, and I've stopped holding my breath. Time to put my Sam's membership to work I guess.

            I hear ya. I've got some Creekstone ribeyes I cut from a full roast when it was on sale for around $20# last year, but I don't imagine we'll see that kind of deal any time soon, if ever again.

                        I wanna go to Costco... Looking for something different to cook for my kids this weekend. The eldest daughter is in town and she tends toward beef rather than chicken or pork (well, so do the other two), which is pretty much all I have in the freezer...

                          Inventories will vary from store to store and region to region, but they had some nice looking tri-tips there when I was shopping. An easy cook for a not all that common cut until recent years this side of the Rockies.
