I don’t see these as often as I did a few years back, and the sale price is definitely higher than it used to be; they used to blow them out around $39/lb. This is a pretty decent piece of American Wagyu, though, so I picked it up for tomorrow. Mrs and I will split it, I just can’t eat as much as I used to.

Salted for dinner tonight. I’m going to sous vide this one, then slap it on the cast iron for a minute a side. I’d afterburner it, but that fat would turn it into an inferno.
Do you think it might be okay to hit it with a torch? Like a charcoal lighting torch? Or would that give it a gas flavor?
Edit: I went to the web page of my propane torch, where there is a video describing this exact thing. So I’m going to sous vide it, then torch it.
