    Chuck Cross Rib Roast?!

    I came across this at Winco today on sale for $2.98/lb so I grabbed one. But what cut exactly is the Chuck cross rib roast? No matter, it seemed to be a decent chunk and price so I figured I would give it a try anyway.

    The chuck and rib primal's are connected to each other. I'm guessing this came from too far forward on the cow to be called "rib" but far enough back to be called fancy chuck which I'm pretty sure is just a marketing term. It's a good looking hunk of meat either way.

      It looks like what our local Butcher calls an Arm Roast. Leaner that Chuck but very good IMO.

            Yes, it's part of the chuck. It is a well used muscle, so it's fairly tough but nice beefy flavor. We buy these when we can get a sale and we cook it like a brisket until tender. Then we shred to make tacos, nachos, bbq sandwiches, etc. Let us know how it turns out for you. Enjoy.

                  I would smoke that baby up as pulled beef, easy to do and who doesn't love what essentially tastes like shredded brisket? Useful in more than just sandwiches too. Yum.
