    Brisket in cryovac in fridge

    Prime packer bought “fresh” from Costco on 9/1/24. Pack date is 8/31/24. Cryovac intact. Went right into freezer when I bought it. Thawed this week to cook this weekend but plans changed. Am I correct that it’s completely fine for this brisket to remain in the fridge in the cryovac for at least another 7-10 days (if not longer)?

        Since your brisket is fully thawed, you also have the opportunity to dry brine it for a good 2-3 days before cooking. Very worth it IMO. Looking forward to seeing how it comes out!

        I have one from last year that I’m going to take out some time in the next few days, to make for the 4th. I’ve done rib roasts that had been frozen for 3 years that were OUTSTANDING, following the same procedure: thaw for about a week

          Took my 16+lbs prime brisket out of the freezer Monday night, plan on dry brining Saturday, smoking on Sunday.

            You should be fine. As others have said, you're now wet aging it. Two years ago I did an experiment, I took a Choice brisket and let it wet age for 30 days (wasn't brave enough to go past that), which was well past the "expiration" date on the cryovac.

            While anecdotal, I perceived it to be more tender than previous Choice briskets I had done.

                I have gone 45 days. As above, if cryovac inflates or leaks, pitch it. Do not try this with pork.

                  bbq_esq I have 'wet aged' cryovac briskets from Costco multiple times to 90 days, even once to 127 days. No problems.

                  The only one I had a problem with was one from Sam's that smelled ok at 45 days, then after cooking, when slicing I noticed green inside the meat - I fed most of that to the dog.

                  But since you froze it from the get-go, it's as if it were fresh from the day you thawed it. So you have MORE than enough time for it to wet age in the cryovac.

                    I bought a brisket in November and smoked in April. I was pushing the envelope and I got lucky that it was just fine.

                  Totally fine. I have left one in the cryovac, un frozen for 60+ days. As long as that bag is not bloated like a balloon, you are just fine.
