            This video is great, I didn't realize the Denver steak was essentially the 'cap', if you will, of the chuck steak. I like it when a butcher actually cuts the meat so you see it happening while they explain the cut, instead of simply describing it.

            I've been a fan of chuck eye steaks for a long time, they cook up mighty fine! If you like ribeyes you won't be disappointed with chuck eyes. My only complaint is that they seem to unroll while grilling, even more than ribeyes do, so I tend to have these long Florida-shaped steaks when they're done.

              I watched a similar video when I learned to butcher a chuck roll into all the separate steaks and roasts. I've not done it in a long time as chuck rolls have crept up there in price (along with all the other beef).
