    Beef decisions for tomorrow -

    Today is my brother's birthday, and he has a SnS travel kettle we haven't broken in.

    In my freezer, I have prepped and frozen- a prime chuckie thats right at 2 lbs and a wet aged well marbled choice flat, about 5 lbs. Flat is also ready to go


    I planned to do pulled beef with the chuckie and add in some sausages. There will be 4 of us for sure but maybe as many as 7 people..

    I was thinking 2 lbs of beef wasnt enough.

    What y'all think?
    Stick with pulled chuckie and add in the sausages?

    Do the flat instead? Can you use a flat for pulled beef? Or burnt ends? Or are those bad ideas?

    For sides, I'm doing a big pot of black eyed peas and anyone else that shows up is supposed to bring something.

    If that flat is wet aged and well marbled do it and slice it to serve as is or a sandwich. That would go great with black eyed peas IMHO.

        I don't think I have the real estate for the flat and the chuckie.
        It's like Sophie's choice - but harder.

      2 pounds of chuck will shrink to about 1.4 pounds post cook. It’s not enough for 7 for sure, and maybe not 4. I would do the flat.

            Ended up doing pulled beef with the chuckie. Big hit! Not enough on its own though.
            Also had some jalapeno cheddar sausage. Which was a good choice bc everyone, surprisingly, showed up

            Glad I DIDNT do the flat though. I thawed it yesterday to smoke this weekend, and forgot that I cured it for pastrami before I froze it.

              Dang, that would have been a hit too! Pulled chuck that is fatty is unbeatable.
