    My Absence

    I have been extremely busy lately with several considerable projects, including the finishing of our basement. My last cook was a Pastrami back in December and it came out just perfect. Here it is:

    I’m finally back in the game today with a Pork Shoulder that I just put on my Classic Joe about an hour ago. I decided to ease my way back in with something fairly simple!

    I hope all of the ladies and gentlemen of our wonderful community are doing well.

    A big hunk o pork is usually a great way to get back in the game.

    And that danged pastrami looks amazeballs!

                  Nice one, I need to do the same very soon, love me some pastrami. This and bacon are my staple cooks on the offset.
