I have an opportunity to pick up a whole chuck roll (choice) for $5.89/#. 25-30# average weight. I am thinking breaking down to a few roasts and a bunch of grind.

Just like a pork shoulder I believe there are multiple muscles that make up that cut. I like it better than brisket, but to low and slow the thing will require quite a crowd to consume it.

Here's a post I did way back on my first try breaking one down. I've done several more since, but minimized the grind in favor of chuck roasts as the Fresh Market nearby sells freshly ground chuck every Tuesday for $3.99/pound. Restaurant Depot now gets $6.50.
A while back when meat $ were a bit high, we didn't want to pay the going prices for chuck, ground chuck for hot dogs and hamburger patties, making boneless rib pastrami, etc. So, I picked up an almost 24 pound choice chuck roll from Restaurant Depot at $3.25 per pound. After a few youtube videos, I tried my hand at breaking

I used to do that also. But now we don't eat as much beef. Used to get about 20lbs of ground with a couple of roast. I also use to get the clod. I can get both at the Chefstore here in town.
