Same here. I smoke baby back ribs cut the slab in half and freeze them. When we go trout fishing I throw them in the microwave of our kitchenette for lunch or dinner. Do that with other smoked items also. Just have to tell the hotel manager we are not smoking in our rooms that is food that you smell. Don't want a $150 cleaning charge

58, great suggestion! It would need to be a really quick trip under the broiler as to not burn the sauce. That’s what scares me. The broiler is roughly 500. Seems like it would only take a minute or two to burn the sauce, no?

You wouldn’t think, would you? But reheating stuff is the microwave’s wheelhouse. Try this: cut off a 1” cube and nuke it for 15 seconds. It’s like magic. Brisket, ribs, pulled pork, any of them. Except chicken, if you’re going to nuke it you have to trim all the fat and the skin doesn’t nuke well.
Honestly, it doesn’t need it. Just thaw them first. You’re not going to leave anything in there long at all; 6 baby backs might need a minute, but I’d check them at 45 seconds. Make a triangle, each side 2 ribs. Any sauce will tack right up under the waves. Bark will be fine. I’ve been doing this for years.
I’d cover them with a couple damp paper towels and microwave them on 30% for 60-90 seconds. But I’m a philistine.

I think 90 minutes in the SV bath is way too long. And too high. Probably more like 20 minutes at 140 maybe? And yes, a quick broil would make lots of sense.

This is what I did. 4o mins in 145 bath, rest - cool for a 10, broil 1 min each side.
