Can I freeze a prime rib roast that has already been dry brined? Long story but I ended up with two, three-bone roasts that have been trimmed and dry brined. One aged in the fridge for two weeks. The ribs had a smell like the bone marrow was going bad. Once the ribs were tossed and the meat dry brined there is no smell. I bought another (on sale, select, w/ decent marble) just in case. I want to freeze one.
