Birthday Beef Wellington

Hit the big 74 today! Carolyn put together a perfect Beef Wellington topped with Prosciutto and mushroom spread. We got the tenderloin from our local butcher from local beef. It was a melt in your mouth cut with a fork perfect. I opened a fine bottle of Italian wine, in there $70 dollar range. We had it for a year stored in our wine frig. I opened it and the distinctive order of a corked bottle was released. Bummer! I've had that happen before but with less expensive bottles. I had another fine bottle of Italian red and it was perfect. Perfect evening.

Yep, beyond tender. That's those high altitude cattle here. How could they not be content living here. We get out Prime Ribs from the same butcher, quite a bit higher cost than Costco but the quality is fantastic. Well worth the cost for something you only do a few times a year.
