ID:	1655910 Today’s the day I smoke the short ribs for the nurses in the infusion lab. I hope they’re pleasantly surprised. Here’s a before they went on the smoker picture. As you can see the young man who cut these up was absolutely overwhelmed by geometry, no two are the same size. I’ll post more pics as the cook progresses.       Oh, see I cook them as one solid rack. They come 2 per cryovac pack, or 4 in some places.

        This is the only way I could get them. They were already cut up and they didn’t have any on hand they would sell me whole. I have to plan further ahead next time. There was a custom butcher shop that had them as a 4 bone spread for $79.90. No way in hell will I pay that for something that’s half bone.

      Short ribs cook a little like blasphemy ribs which are cooked as individual pork ribs instead of a slab of ribs. It typically shortens the cook time.

              There might not be a better beef but, when it comes down to it. I LOVE beef ribs. Rich, beefy and oh so tender. What is not to love about this beefy treat!
