Short rib day
Today’s the day I smoke the short ribs for the nurses in the infusion lab. I hope they’re pleasantly surprised. Here’s a before they went on the smoker picture. As you can see the young man who cut these up was absolutely overwhelmed by geometry, no two are the same size. I’ll post more pics as the cook progresses. Did I mention it’s supposed to be 100 F here today.

This is the only way I could get them. They were already cut up and they didn’t have any on hand they would sell me whole. I have to plan further ahead next time. There was a custom butcher shop that had them as a 4 bone spread for $79.90. No way in hell will I pay that for something that’s half bone.
