We headed to Abilene TX again today to pick up a few things we needed. I had a beef list to try to find. At Sam’s I found a beautiful choice ribeye loin. I wanted some 123A beef plate ribs, AKA Dino ribs, there were none to be found anywhere. I did find some beautiful bone in short ribs which I bought. These look very similar to a shortened Dino rib. The meat is about 2 inches thick but they are only about 5 inches long. Do these cook up about like a plate rib just quicker? These are for a group of nurses in the infusion lab that keeps me going without UC. I’ve told them about loving to run my smoker and the question was when are you bringing us some bbq? I had intended that to be plate ribs but it looks like short ribs are on the menu with some baked rig potatoes. I want these to go over well so any tips will be appreciated.

Oak Smoke at my Sam's Club, the only beef ribs you will see out are the flanken cut ones. BUT they have the big ole slabs of beef plate ribs in the back. You just gotta ask. About $2 less per pound than the flanken cut ones (like $7.98 versus $9.98 per pound). The catch is you gotta buy a 2 pack in the cryovac to get them. So it's TWO big 3 bone slabs, for maybe $70 or so.
EDIT: Maybe I am confusing short ribs and plate ribs... if so, please ignore me. Yep. Just checked and the ribs I am thinking of are short ribs. But the ones I get are 10-12 inches long.

jfmorris I would have been happy with 10-12 inch ribs. I ask the folks in the meat dept at Sam’s and was told they didn’t have any. They show them on their web site but didn’t have any that day. They did go in the back and hand pick me a beautiful choice ribeye roll. It has to close to prime.
