THE VERDICT IS IN! ……
Well, I gotta say, the outside skirt is definitely worth seeking out if you can get it! This was by far the most tender skirt steak I’ve ever had. And the flavor was better too. The choice outside skirt was every bit as good as the Wagyu IMO. Both were great, but the Wagyu was a little softer chew than the choice grade, probably not a surprise with all the extra marbling. I ate a few pieces by themselves to compare, before putting them in my fajitas. When I first ate a few pieces, it reminded me of eating a well made ribeye steak, texture wise. While I thoroughly enjoyed the Wagyu skirt, I didn’t think it was enough to warrant the higher price. I’m not disappointed at all for buying some….at least now I can finally say I’ve tried some Wagyu.
