The Sweetheart Steak: What It Is, and How to Cut It

As soon as I saw this Sweetheart Steak advertised from Lobel's I knew I had to try to replicate it:

Wouldn't it be perfect for Father's Day, Mother's Day Valentine's Day, Anniversaries, Birthdays, etc? Romance and a Delicious Steak all in one--nothing not to like.

I watched this You Tube video (this woman is a butcher), and learned how to cut it from a ribeye:

This will be fun to try!

P.S. Lobels wants $100 for that steak (plus shipping, I'm assuming.)

It looks like a butterflied NY strip. A very high quality one at that. The marbling is great.

Agreed. The Lobel's steak looks like a NYstrip, but the video shows how to make it from a ribeye, which I would prefer anyway. Not that I would be making it for me, of course!

The New York is great for ground meat.

Thatโ€™s an adorable steak. Can I say that? Doesnโ€™t seem right talking about a steak. But I digress.

My wife would love this for Valentineโ€™s Day or our anniversary! It would actually be amazingโ€ฆIโ€™d get to spend quality time outside grilling over a live fire and my wife would think itโ€™s romantic! Talk about a win-win!

So a very cool steak for sure, but at 100 dollars, I could get 2 lbs of ribeye cap steak, thatโ€™s how you say, I love you. ๐Ÿ˜‚

The steak in their photo has great marbling, but not $85/lb great!

At that price Iโ€™ll pick up a whole rib roast and have a dozen more steaks to go with it too!

Local brookshores will butterfly ribeyes into a heart, and even have heart shaped packaging for it.

From a butcher stand point, this is brilliant. The marbling on the one fzxdoc posted on that strip, I want that steak in my belly,
