I was just watching Franklin'the cook video on youtube. I've watched it quite a few times. Tonight is the 1st time I noticed after he wrapped his brisket, he placed it back on the smoker with the point away from the fire. Am I missing something?
If it's the video where he is cooking on a smaller offset cooker, the entire brisket is some distance from the fire box. Don't know for sure, but I believe that he feels that there is some heat concentration at the exhaust chimney. I think someone else referred to that region on their Jambo offset as the "Jambo microwave".
