    What cut is this?

    Was at our local Sam's Club yesterday morning and found this:

    It's labelled "London Broil" on the yellow mark-down tag. The original tag underneath says "Beef Top Round London Broil."

    It's hard to tell from the picture, but it's a flat cut. I don't think it is Top Round.

    I think maybe it's Flank Steak, but I'm just not sure. If anyone can help positively ID this I would appreciate it.

    As a side note, there were a lot of cuts that were marked down by 25%. Maybe Thursday morning is a good time to check the meat counter at Sam's.

    The shape looks tri tip, but the muscle isn’t a tri tip. It’s a flank steak, bent to fit in the package.

    I dunno. Flank steak sold at Sam's Club (note the Members Mark Angus Beef labeling), is sold rolled up, in a 2 pack. I don't think it is flank, as I've bought that a number of times at Sam's. I've bought the "London Broil", and while that is more marbled than most, it's hard to tell what it is cut from.

    I gave the couple of these I've bought the "London Broil done Right" recipe treatment from Meathead, from over on the free side, and we enjoyed it. Basically, marinated, then tossed on the grill still wet from the marinade, and cooked to medium-ish (I had to compromise with the wife and daughter at the time - they wanted med-well, I wanted med-rare).

      London broil isn’t really a meat cut but a cooking method.

    That could very well be. London Broil isn’t really a fixed name, but it does usually mean top round steak.

    I looked at the way the grain runs, and the way the cut is thick at one end and tapers at the other. What I know as London Broil is the same thickness end to end, and the grain runs differently.

    But for all we know, we could still be talking about the same thing!

      Top Round!!!! Marinate the heck outta that thing and slice it thin. Teriyaki a d a hot fire comes to mind!
