While in Costco today, I checked out the prime filets and noticed a new label:
Notice that the label no longer sez "blade tenderized". I looked at other labels and they still say "blade tenderized", but I already forgot what cut...
And they now have Costco charcoal in stock. 2 twenty lb bags are a little cheaper than 2 smaller bags of KBB.
The tenderloins are not blade tenderized by Costco, never were as far as I know, some of their other cuts, yes. I honestly don’t know why that should matter to anyone anyway. It’s not a health hazard and Costco sells some of the best steaks I’ve found anywhere. Can someone please name one instance where blade tenderized steaks from Costco made anyone sick? 🥸 I’ve had at least 100 blade tenderized steaks from them, never did anything to me except illicit shrieks of joy.

In July 2021 we had a big discussion about blade tenderized steaks. BBQPhil emailed the company to inquire about the safety of that process. The CEO of Costco emailed him back and actually invited him to one of their stores for a first hand look at the process……here’s what BBQPhil wrote afterwards.
A few weeks ago there was a discussion here about why Costco blade-tenderizes their prime cuts of steak, and if it created an added health risk. What stood out to me was the labelling that also recommended cooking the steaks to 160, which none of us do.

Costco's Tri-Tips are blade tenderized. They're great and one of my favs.
I have a Jaccard meat tenderizer in case I need to do it myself.
Some cuts of meat do not need tenderizing. Tenderloin is one of them IMHO.

Wow...I rarely get a good steak at Costco. Sam's Club does a better job. I wonder if your location is the key? I'm in Florida. You're in cattle country.
Hi dlaslo - I’m in St. Pete. I feel same way. Sam’s is better than Costco. I think location is key. TX has a larger number of cattle than other states by far. However, FL is a respectable 9th place in the US.
Maybe in some regions Costco or Sam’s just have access to better product.
DogFaced PonySoldier as the others said, the outside skirt is labeled. I'm parked on sofa with dog on me, but I'll go out in a minute and see if one is in freezer I can photo. They also have flank steak, flap steak, and sometimes "regular" skirt steak, all packaged in the usual foam tray.
Here is how my Costco labels and packages their skirt steak:
I assume this is inside skirt - but the one time I asked on of their meat department employees about inside or outside, he had no clue what I was even talking about.
We have never liked Costco steaks but their tenderloin is very good. Since we eat very little steak we just purchase the tenderloin only for our few steak grillings.
Indeed! The Negra, of course, not the Especial. In the door is the Dos Equis Amber and Smithwick's Red Ale. My buddy SmokerBuilder Frank Cox is coming by today, so I need to throw some ribs on and then run to the store and get some original Coors for him! lol
