    What to do with a skirt steak

    Found and purchased it from the local grocery store this week out of the "Get it the hell out of here before it wakes up" section.
    Promptly froze it because I have read and seen some pretty cooks using skirt steak but have never tried to cook it myself. But want to.
    So! Looking for ideas. My tastes are simple, salt and pepper and let it age on a rack before cooking, some applewood chips while making a burger or a steak.
    my doneness tastes are Knock the horns off, wipe it's ass and serve it! But I like BBQ and smoke flavors so have to allow a little heat in there, If I have to, I guess. Rest in Peace, Red Green!!!

    Ideas??

    Skirt is great for hot and fast cooking similar to a flank and when I think skirt I always think tacos. Find a nice citrusy marinade, grill hot and fast, then cut very thin across the grain.
    Im not nearly as creative as most here so I’m looking forward to see what others chime in with.

    Inside skirt or outside skirt? Outside is tenderer and can actually be eaten like a steak or used in tacos, fajitas, etc. Inside needs to be cut into small pieces -sliced against the grain. To cook rare to med. rare, I give them about a minute and a half to two minutes per side over a high fire.

      I agree, there is a major difference between outside and inside skirt. I don't like inside unless it has been beaten up with a mallet. But I can eat outside skirt all day and night.

    I have made skirt steak tacos for over 20 years and they are outstanding. Marinade them in Goya marinade or look up your own recipe for 6-8 hours, and sear them off for a few minutes a side. Slice for tacos. Serve with your favorite taco fixings. Delicious!

      I’ve used many a skirt steak for carne asada tacos. Here’s my marinade for 2lbs of meat:

      1 serrano minced
      4 cloves garlic minced
      1/2 cup fresh cilantro leaves chopped
      juice of 1 orange
      juice of 1 lemon
      juice of 3 key limes
      2 tablespoons apple cider vinegar
      1/3 cup avocado oil
      1 teaspoon ground cumin
      Salt and pepper to taste

      Sometimes I sub corn oil for avocado oil since corn tortillas are typically my tortilla of choice. Use any oil you like.

        I vote for Fajitas. Seasoned, marinated and then grilled. Sliced against the grain and then added to crisp tender vegetables (red onion, green and red peppers) in a skillet and quickly sauteed to combine the flavors. Served with warm flour tortillas, rich and beans.....oh my.

          tmaan235 - pare it with whatever you want. My family is set on the rice. The beans not so much, but easy and good.

            My go-to marinade is equal parts (about 1/4 cup) of oil, lime juice, and soy sauce -- marinated for about eight hours. It is perfect in its simplicity. I've tried others with garlic, pepper, cilantro....but all that just burns up in the flame.

              Here's my go to Outside Skirt Steak marinade with an Asian twist. Then cook hot and fast. Cook 4" to 5" sections cut with the grain and cook, then cut across the grain to eat as steak or cut up for fajitas or stir fry.

              Skirt Steak Kalbi

              Ingredients
              5 pounds Skirt steak
              1 cup brown sugar, packed
              1 cup soy sauce
              1/2 cup water
              1/4 cup mirin (rice wine)
              1 small onion, peeled and finely grated
              1 small Asian pear, peeled and finely grated
              4 tablespoons minced garlic
              2 tablespoons dark sesame oil
              1/4 teaspoon black pepper
              2 green onions, thinly sliced (optional)
              Preparation:
              Directions
              Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.

              Dang, y'all out did me. I grilled it and ate it with a baked potato. I need to get more creative.
