Wanted to pick up some sirloin steaks as weather looks good enough to grill tomorrow (not that it stops me otherwise). Spotted these at Costco. As they usually do, they package some with really nice marbling with some lesser ones, but 9.99/lb for some prime beef is hard to come by around here.
So what exactly do I have here? The inclusion of cap in the name makes me think it’s somehow picanha related, as Costco uses the cap verbiage on those. Is it basically just top sirloin?
I was planning to cube marinate and kebab them but with those nicer marbled pieces I may just dry brine and cook like a normal steak.
Top sirloin cap is what is also known as the picanha or coulotte. At Costco they trim off the fat cap and slice them into steaks. Sometimes I've asked them and been able to buy whole TS cap that they had in the back that is still cryovaced and has the fat cap on, for a true picanha cook.
They have picanha here, for about a year now. There is a very large Brazilian population in this area so I suspect that’s why they always have it. Good news for me. They don’t have prime ones but they are still very good. Or maybe they did have primes and they became what I bought.
I guess these are cap removed picanha steaks. Works for me.
