    Leftover Prime Rib

    Our gathering was small this year which means I have leftover prime rib. I'm just looking for some inspiration for how y'all use it in various leftover recipes?

          Steak and eggs for breakfast. Sandwich with a good bread and the au jus made from the drippings. At least I hope you have drippings.

            My lovely bride makes an amazing beef mushroom barley soup with leftover prime rib, that's another excellent use.

              For Hash! Per CUP of cooked roast, small cubes, I use 2 TBS butter, 2 TBS onion, 1.5 cups of potatoes (I useYukon Gold ), small cubes, 1/4 cup water, 1/2 tsp concentrated beef broth (I like Better Than Bullion), 1/4 tsp each of salt and pepper, keeping in mind how much of each is already present in the ingredients. I do not add the extra salt most times, but I do like pepper! I usually start with 4 cups of cubed roast and quadruple the recipe to fit in a 10 inch pan with a lid. Heat the pan, add the butter to melt, throw in the rest of the ingredients and stir. Bring to a simmer, reduce heat to low, and cover. Simmer until the potatoes soften, and the liquid thickens, 15-20 minutes. Remove the cover and heat an additional 5 minutes or so until the liquid turns to a gravy how you like it, or until you just can't stand it any more and dish it up into a bowl. Enjoy!
