So…if my beef tenderloin happens to reach temp on the smoker earlier than anticipated(125), how long can it sit “resting” before I blast it on the gasser/GG’s to get it up to my 135?

Safety nerds will say something smart I'm sure...I'll say until it's time to serve. I always finish the roast way early just to be sure. I cove it loosely and let sit until ready to sear...many times a couple hours.
