I've started making chicken broth every time we roast a chicken. Cooking things down under pressure in the Instant Pot has made this a no-brainer for me. I've been toying with the idea of beef broth every time I see ox tails in the supermarket. I'll have to give that a try.
A friend with a PBC saves her chicken bones in the freezer to make big batches of broth. I think I need a bigger freezer...
I save leftover raw onions and their skins, leftover carrots and celery every time we have them. The only bones I’ve ever saved were rib bones just recently. We have so many bones in the freezer from having our beef processed that saving more isn’t necessary. I know what you mean by needing a bigger freezer.
