    Lifespan of Tallow

    How long does beef tallow last in the refrigerator? I haven't made steaks since October. The last time I did, I rendered tallow from the trimmings. Well, today I found the tallow in the back of the fridge. It smells fine but I am sure it has been there for close to four weeks. Is it safe to keep/ freeze until needed, or should I pitch it?

    That stuff should keep for a year at room temperature.

      I have a mason jar of tallow sitting by my stove right now. I use it sparingly, but I've never noticed any rancid smells coming from it sitting at room temperature. It still tastes delicious.

        I keep it in the fridge, doesn't usually last longer than a year... not 'cause it goes bad but because I used it all

          I keep in fridge for as long as it lasts, never had an issue or an odd rancid odor/taste.

          I have a tub of that wagyu tallow the YouTubers told me to buy. It’s got a "best by" date about 7 months out. That’s at room temp after opening. And those dates aren’t really expiration dates, more like "buy more" dates.

          I use a tub a year or so. Nothing bad at a year in the fridge.

              Never had a batch go bad. You will be fine. I keep mine on the counter. I have back up jars in the garage fridge.

                  I freeze my tallow in 2TBL portions. I don't like clutter around my cooktop and don't want tallow taking up fridge space. Bacon grease, however, gets pride of place in the fridge because I use it more often.

                    Sure do, DTro. I scoop the fridge-hardened tallow out on a parchment paper lined tray and slide it into the freezer, uncovered. When the tallow clumps are frozen, I dump them off the parchment paper into a plastic bag. I don't vac seal.

                    Some people use ice cube trays, but I'm too lazy to dirty one or two of those to use to shape the clumps and measure them precisely. These 2 TBL clumps are not precise, nor do they need to be, at least for my uses.

                    Tallow-filled ice cube trays in the freezer take up more room than a plastic bag. Trying to get the tallow out of the trays and into the bags resulted in the chunks starting to melt instantly on the surface the more I handled them; they'd bunch and freeze together if I tried to subsequently store them in a bag. So I went simple with parchment paper and clumps of tallow.
