Cook timing for boneless prime rib roasts

    Meathead’s prime rib page as you might imagine is outstanding and includes cooking times. I have split it into three cuts and it was one of the most fun cooks I have done because I felt rather “accomplished” .

    There are some tricks to learning how to cook a perfect prime rib, rump, and other beef roasts and we have assembled them all in one place!

      I'm usually way over the stated 15 min per lb rule, since it's faulty anyway. Cook time is based on how far the heat has to travel inward not the weight of the meat. I find that to be way too quick for my experiences. I'm usually 3 to 3.5 hrs for a 5-7lber at ~225. I used Meathead's rule of thumb for my first one and we ate about 1.5 hrs late. I trim mine liberally, tie it tightly into a cylinder, let it sit out on the counter for 2 or 3 hrs or so to help warm up slowly, and it still takes that long, give or take.

        I cooked a 5 lb Prime Rib last night and it took 2:25 minutes. Rounding to 2.5, that takes it to exactly 30 min/pound as you guys suggested. WOW. Right on the money. Thank you all so much. Dinner went well and I think guests enjoyed the meal. A winner all around. Thanks again!
