For my wife's 60th, we picked up some Wagyu Strip steaks, about 1.25" thick I wanted them to be slightly thicker, but didn't catch the guy in time. We had pre ordered ribeye, but they didn't get any in 
We cooked these at my friends house with his propane smoker with a modified chip pan and post oak chips. It was a bit of a struggle, me using a smoker I wasn't familiar with, but in the end we nailed it. cooked to 125F, let to rest for about 15 minutes and seared on the blazing hot grill for 60s on each side. Did I mention we nailed it? LOL
Paired with the last two bottles of my 2018 bourbon barrel cab zin blend, it was perfect.
