    The Dangers of Browsing at Costco

    Per my usual MO, while shopping at Costco for our regular stuff (a lot of paper goods, some meds, cleaning products, etc.), I always browse the refrigerated food, meats and seafood (as I am sure all you Costco customers do!).

    Suddenly a NEW beef product leap up and grabbed me - Wagyu Beef plate ribs! I've never seen these before. Costco regularly sells Prime whole plate rib racks as well as cut-up and trimmed prime short ribs. These magnificent ribs were selling 2 to a package, already sliced. Here are some pics before I smoke them tomorrow, being dry brined with kosher salt right now. The only thing I'll put on them in the morning is fresh pepper. Oh Boy!

    I don't recall, but I'm pretty sure they are American Wagyu - not idea what grade. I plan to smoke them at 240*-250*. Normally I would target for over 200* for finish IT temp, but I'm guessing these will render and get very tender before that. Not sure if I'll boat them since they are already separated, but I'll go by how the cook is unfolding. Definitely going to probe for tenderness starting at 180*-185*.

      Here they are just before coming off at 204*.
      Also some Marcella’s. Too good.
      I can usually pick them up at BIL’s Deli for
      $2.99. I guess no one around here eats beef ribs.

        Yes…..browsing at Costco usually means trouble for me! My wife doesn’t let me go often she usually stops in on her way home from work.

        but….I may have to offer to go next week….you know…to browse for some ribs! Those look excellent!

            I've never seen wangus short ribs at my Costco. I've never seen any type of plate ribs either.

            Costco has Brisker in sale for 2.99/lbs
            I joined Costco for prime beef. But I was told by the meat department that now the highest grade in choice.
            Supplies issues.

              Move to SoCal . Lotsa prime beef at our local Costco. Brisket, steaks, roasts. I haven’t looked at whole packer prices though.

            Wow I hope my Costco starts stocking these. I have never seen plate ribs of any kind at any of our local Costco stores. I was able to pick up a prime brisket two weeks ago, but it has been pretty hit or miss.

              Started them at 7 AM. Smoker running just under 240*. 3 hours in and they are in the stall, right around 180*. That's OK with me as the plan is to eat at 3-3:30.

                  Saw at least a dzn Prime full packers @ Costco, btw 12- 18 lbs.. only prob $4.49 pound. They said Prime would not be back.

                    And the results! I pulled them at 1:30 PM when the IT was 190* or so. They probed like jello. Wrapped and into a warm oven until 3 PM. Verdict: very, very tender and juicy. The downside were some significant areas of fat, not marbling like I expected to see with wagyu. The fat areas were very similar to what I see in choice or prime short ribs/plate ribs. BUT, very tasty. I have a bag of Costco prime trimmed short ribs in the freezer, so when I do those, I'll be looking to compare. Bottom line: I think prime from Widlfork, Creekstone or Costco is just fine. I'm glad I tried these though.

                    Prime is back at Costco Eden Prairie! Went in for a TV so I had to make myself feel good by getting a brisket and a $1.50 dog!!
