Per my usual MO, while shopping at Costco for our regular stuff (a lot of paper goods, some meds, cleaning products, etc.), I always browse the refrigerated food, meats and seafood (as I am sure all you Costco customers do!).
Suddenly a NEW beef product leap up and grabbed me - Wagyu Beef plate ribs! I've never seen these before. Costco regularly sells Prime whole plate rib racks as well as cut-up and trimmed prime short ribs. These magnificent ribs were selling 2 to a package, already sliced. Here are some pics before I smoke them tomorrow, being dry brined with kosher salt right now. The only thing I'll put on them in the morning is fresh pepper. Oh Boy!

I don't recall, but I'm pretty sure they are American Wagyu - not idea what grade. I plan to smoke them at 240*-250*. Normally I would target for over 200* for finish IT temp, but I'm guessing these will render and get very tender before that. Not sure if I'll boat them since they are already separated, but I'll go by how the cook is unfolding. Definitely going to probe for tenderness starting at 180*-185*.
