I just read this on the Bon Appetit website and thought it worth sharing with my meat friends. The article explains how to fake dry aged steak by rubbing it with koji (a Japanese grain) and letting it sit for 48 hours in the fridge. I'm gonna try it. (As soon as I can get myself some koji ...)
