    Can I refreeze a wet aged brisket?

    I have a prime brisket that has been wet aging in my fridge for about 35 days. It's still in its original cryovac. I was going to cook it this weekend, but life is getting in the way. Okay to refreeze and then thaw out in a few months to season and cook? Thanks in advance for the input.

    I wet age all my briskets, normally 3 at a time. When they hit 60 days or there about, I freeze them until I’m ready to use them. I’ve never noticed any problems at all.

    Yep give it a run. Nothing wrong with this at all.

    Absolutely. I've wet aged for 80-90+ days and THEN frozen and cooked later. Worked fine.
