Definitely. Works great. Same method as brisket, boat it after bark is pretty well set. Helps retain moisture and if you’re inclined to bump the temps it can speed things up without sacrificing quality. And unlike brisket there’s no bark on the bottom of the ribs to worry about softening. You can add liquid to the boat but I don’t bother, there will be plenty of rendered fat and juice regardless.
This is exactly what I wanted to know. I'm looking at a couple sets, maybe I'll do one wrapped in paper with tallow, one foil boated? I dunno... sounds like an interesting possibility.
Haha maybe I can hire you to talk to my wife. But seriously folks…lots of opinions on boats, wrapping, etc. I won’t go all the way to "makes ‘em better," but in my experience the boat gets you "as good or better" in less time. Some don’t care about the time factor, ymmv
