This cook was a wild ride. At the last minute, I realized I ran out of pellets and necessitated a quick trip to the store. Then after 6 hours cooking my smoker dropped in temperature some 50 degrees. I looked at the controller and it was reading in C not F.....what the ....? I changed it back to F and the temperature shot up to 320F and kept going. I shut it off and put the brisket in the oven to finish, The next day I started the smoker to see if the controller was still acting up and it was fine.
Must have been a clog of pellet fines in the screw feeder. Usually I screen the bag of pellets but with my last minute purchase, I skipped that step.
Next brisket goes on the charcoal smoker.
