Another time saving idea….
I cook Prime brisket (Costco!) at 250-275°F and I’ve never had one take more than 10 hours, and 9 hours is closer to normal. That’s still low and slow…and they come out great.
My experience as well. I almost never cook at 225 anymore. We may be giving something up, but we cannot tell the difference. In my stick burner, 225 for 10-12 hours tends to dry the meat, even with a water pan and FL’s 80% humidity.
Typically water pans are a no go for pellet grills, but try it if ya want. There are a couple models with a water pan (a Myron Mixon branded one was one example I can think of). If you have a cheaper model or one of the mid range grills with random hot spots and massive fluctuations a water pan can help, but IMO you'd be better off with a brick or two place on the opposite side of the thermocouple which won't block airflow or cause issues with the thermocouple cycling the feed rate.
