Beef riblets

    Beef riblets

    I purchased some beef riblets from wally World above 2 weeks ago. The have been in the bottom of refrigerator and the sell by date is 6/27/23. If I were to wet brine them how long would you let them go, and should I go by the sell by date or when I first put in the refrigerator? Also when I take them out what should I expect and treat the ribs. I know there are a lot of questions sorry.

    "Sell by" date doesn't mean "use by", so as long as they were cold you're probably plenty good on the date, especially since it's still today. As far as the rest of your questions, I can't really help. I don't typically wet brine beef, nor do I personally have experience with beef riblets. If I had them in my fridge I'd probably dry brine them and search for a decent recipe.

      Unless they have a strong funky odor when you unwrap you should be good.

        You will be fine.

        I would skip the wet brine and simply dry brine them with salt and coarse black pepper. Beef riblets carry a beefy taste and simple salt and pepper will let that shine. You can also add Granulated Garlic and Granulated Onion (equal parts). Then you should be good to go.


        i've had beef ribs in my fridge for over a month after the "sell by date". I am not a food scientist, but it worked just fine for me. Poultry is what you really have to worry about. Them dirty birds get nasty by the minute.

          Agree with the Spinmeister & Huskee, ignore the date thing with the timeline yer workin with, it matters not. Also agree on deep sixin the wet brine & go with dry.
          When ya take the little suckers out, give em a proper greeting so they feel at home, maybe even salute em. That way they will love ya more when ya goo to pick em up to cook em, yessir.

          Are the ribs vacuum packed? If so, I would not worry about the date. Either way, trust your nose.
