    Dino ribs, long hold?

    Hello Brethren,
    Quik simple question. Do Dino ribs benefit from a long hold similar to brisket?

    Yes. A minimum of two hours is needed I feel. More is better. I try for four hours if I can. Makes a huge difference.

      +1 2-4 hrs for sure.

    My last cook at 225 took 5 hours, but my temps ran wild with a good portion of time running just shy of 300. I have seen these recommendations temp 300 - 5-6 hours, 225 - 8-10 hours. Cook to an internal temp of between 195 and 203 is the typical recommendation or to probe tender. In my afore mentioned cook they were probe tender at 207

      Yep - every time we cook ribs the timing is different. ‘Probe tender’ is the only way to know fer sher.
      When you can feel the probe go through the membrane between the ribs without resistance. They are done.

        Absolutely hold 'em. My beef rib cooks routinely consume 12 hours from meat-in-pit to meat-on-plate. Have fun!
