My last cook at 225 took 5 hours, but my temps ran wild with a good portion of time running just shy of 300. I have seen these recommendations temp 300 - 5-6 hours, 225 - 8-10 hours. Cook to an internal temp of between 195 and 203 is the typical recommendation or to probe tender. In my afore mentioned cook they were probe tender at 207
Yep - every time we cook ribs the timing is different. ‘Probe tender’ is the only way to know fer sher.
When you can feel the probe go through the membrane between the ribs without resistance. They are done.
