Prolly pretty edible. Man, it's been one helluva long time since I've done steak here....
I need a new grill. My old gasser is burnt out, I can still eke some life out of the charcoal side - it's an old Char-Griller Duo. It served its purpose for many years, I think it's gotta be 13 years old by now, if not 14.
But that just made me think, I haven't done steaks in a couple of years, I think. And that was sous vide the last few times. I got family coming in from out of the country in August, so I may have to take a night off of smoking to do some grilling.
