I have 2 cuts of petite filet, aka. the teres major from under the beef shoulder clod. The total is 1.2 lbs and I'm making 6 bacon wrapped steaks in the style of filet mignon, but each is only about 4 oz including the bacon. Pic shows half of the prep completed. Not trying to overthink it - should be pretty straightforward to grill over charcoal, but I'm hoping I can get the bacon well crisped without overcooking the beef. Any tips from folks who have done it are appreciated.

I always par cook the bacon, simmer in water for a few minutes or the microwave.Last edited by SierraBBQGuy; June 3, 2023, 07:52 PM.
