Got myself a Wagyu ribeye

    I figured I'd report back, as I did the cook yesterday. Spoiler: it went well

    I fired up my offset smoker, as a cut of meat like this deserves smoke flavor. All that fat must be merrried with smoke

    I ran it at 120° C / 250° F consistently. I was aiming for 50° C internal temp. Once I hit 45° C, then I seared it in a cast iron pan in the firebox. The reason for the cast iron pan is because the beef is so fatty. If I would attempt to sear it over live fire I would have one helluva grease fire :-)

    I served it with a mediterranian sallad: Taboulleh. It's made with parsley, tomatoes, bulgur and lots of lemon. I figured I wanted something with a lot of tang to cut through the fatty beef flavor.

    So, how was it? Absolutely wonderful! Personally I love that rich flavor, and the fat has a different characteristic since it contains more unsaturated fats.

    I ate half for lunch, and the other half for dinner. Yum!!

      Good to know your arteries are still pumping nicely. You cooked that gem of a piece of beef very thoughtfully. Kudos.

      So what did your wife eat? And did the dog get even a scrap?

        Thanks Kathryn! My wife was away, so I "had to" eat that myself :-) I did get some scraps to my dog, I don't ever think I've seen her so happy :-)

        Holy Smokes.... that is ridiculous.... not the cook but your wife so conveniently out of town. skillz my friend. Great call on the salad!!! I like mine with farro. that salad was a pro move. Cheers!

        Henrik Just moved to Stockholm from Texas last August, would love any recommendation on where I can find some high quality beef like that!

          Cool!! You have to visit Kötthallen in Barkarby (just north of Stockholm). Also: South Side BBQ in Västberga. It’s the only legit bbq store in Stockholm. As for restaurants: Det Arroganta Svinet in Jordbro.
