Bad flat iron

    Bad flat iron

    Tried a new butcher out. Skirt steak was good but way over priced. This flat iron looked really well marbled but my daughter was running amok so I didn’t give it much of a look over, and now I see it has a big vein of fat running through the middle. I’ve cooked flat irons like this before and hated it.

    Any suggestions? Just cook it and eat around it? Maybe I can cut it out and cook it another way, like pound it and do a roulade like you might do with flank steak.

      I love flat iron normally. Definitely one of the best cuts for the price out there.

    Grind it up into burgers, and chili, or dice it up for stew, maybe?
    It looks good from one side. Myself, I would just cook it up and eat it.

      That top side is why I bought it, looked like fantastic marbling on a choice cut.

    Or slice that sucker up for stir fry and cut out what doesn’t look like it will be edible.

    Cook it, then serve it sliced (minus the dodgy bits). A little board sauce would help. And relax, it'll be fine ...

      I know, but a bad cook drives me nuts. My wife thinks I am nuts. She isn't wrong, to be clear.
