    Brisket Point Corned Beef

    Giant Supermarkets have point cut corned beef now in advance of St. Paddy's day. They make great pastrami. I bought the biggest one I could find today to make pastrami from.

    No Giant supermarkets near me. I can usually find them at Walmart or Aldi this time of year though.

      Aldi has point on sale for $2.99lb. Flat 3.99. I brought one today.

    There are a bunch of flats and points at our local Walmart.
    There are running small, around 3lbs.

      The one I got, which was the biggest in the case, was a bit over 3.5 lbs.

      I found one that is 4 lbs.
      The rest I've seen are 3 lbs and under, both points and flats..

      Our Kroger has them as well. I’m making Meathead’s recipe from a packer I just cut up (and and what a bad job I did). Otherwise I’d pick up a few.

        The Acme near me has a bunch of corned beef points all on sale for $2/lb. I picked up two 2-3 pounders and may grab 1-2 more. A hell of a deal and super easy to make great pastrami (and much better than the flats that are going for $5-6 per lb!)

          One positive thing about living in Miami is that supermarkets stock up on corned beef, but do not usually sell all of it. So guess why buys a bunch on clearance? Freezer is gonna fill up!

            Went to my local Costco and Aldi's and they were both out of corned beef. Had to go to GFS for some Diamond kosher and picked up this. Based on the Sodium levels, I will be bathing it in water with many water exchanges until Friday. Never had Davis Creek, so this will be interesting.

              Hello everyone,

              I was just going to post a question about this.
              I was going to ask about smoking a store bought corned beef brisket point.
              Can I just rub it and smoke it like it is, or do I need to go through the additional steps to make pastrami?

              Please talk to me about smoking corned beef brisket points. I also have a sous vide, would that be a good alternative to wrapping / TX crutch?

                jjdbike - With a store bought corned beef, whichever cut, you should first desalinate it (soak it in water for at least 8 hours with frequent water changes) then you can just rub it with the pastrami rub, let it sit in the fridge uncovered for a day or 2 and then smoke it. You might want to desalinate for longer than 8 hours and you might want to lightly trim it up, depending on what it looks like out of the package.

                To oversimplify, pastrami is smoked corned beef. So if you buy the pre-corned but still raw corned beef, all you really need to do is rub and smoke.

                That being said, you should definitely de-salinate for 24 hrs otherwise it will be way too salty.

                    I picked up a corned point for $2.42 a lb. I probably should have gotten two. I'll freeze and smoke at a latter date.

                      I have a question here: Should I trim the fat cap off of the store bought point before rubbing it?

                        That depends on how much fat you like to eat. I will trim most of the surface fat from the ones I bought.
