Too much. IMHO.
Again, just like the 3-2-1 method. No need for all these steps.
Just cook the brisket the way they have been doing it for years. If you wanna braise it, then I guess you can do that in the oven after the smoke step. For me personally, I love letting it ride as long as possible in the smoke, to get the crust and color I like. Then I will wrap for the last 20 mins or so, and only to push the brisket to the finish line.
Like many things in life, people over think it and over do it. Many times, it makes things more complicated than they need to be.
One thing to remember here is that YouTubers need new content. Nothing wrong with that at all. And we all have fun experimenting, but not all this stuff is worth it or necessary. Might be fun, but often times, unnecessary.
