Wanna give burnt ends a try. Read the description in the brisket recipe page but 1 quick question, how long should I expect to let them cook after I fry and add the sauce and crutch juice.

Typically when the brisket is "done" and you slice up the ends and sauce them, about another hour or so will get them to desired tenderness. See how easy they pull apart to know.
I mostly just go by the colour of them, slide the point off the brisket when you pull the brisket, cube it up and back into the smoker with a couple chunks of wood
