    Ideas on what to do with a brisket flat that’s so dry it is almost crumbling?

    Major brisket fail. A Costco prime brisket. The flat is so dry it is almost crumbling. When I picked it up, the whole thing cracked (see pic). Any suggestions on a use for the flat other than paperweight?

    Chopped brisket sandwiches with a little BBQ sauce,…… BEANS! TACOS! Just for starters. I’m sure you’ll get many more suggestions.

      How about pulled/shredded beef? Add back a little au jus from the pan to the right? Bet it'd be real tasty

        I had a pastrami like that about two weeks ago and just slathered more mustard than usual on them.

          Adding/surrounding it with fat is the key. Chili.....tacos with a crema sauce....

            Exactly. Chop it and fry it up in some “beef love” - like a beef carnitas. Or chop it up and rehydrate in a little beef broth. It’ll be delicious.

          open faced sammiches with gravy
          Brisket mac and cheese
          Beef and beans
          Stuffed peppers
          Continue cooking until it becomes jerky 🤷‍♂️

            The same way I've cooked hundreds of briskets before. I blame the cow. It's just the piece of meat.

          Until coming here I always cut the ends and sides of a brisket off to use in beans. It was very good for that. Then I learned about burnt ends. I’m not talking about some sauced up deal, I mean just cut them off and enjoy that wonderful crunchy flavor. Yours should have some good flavor like the sides and ends I used back then and go great in beans.

            Thanks folks. Those are some great suggestions. I'll run them by my dear wife and do one or more of them.

            I threw some of the meat in that pan with drippings, added a can of beans and a can or Rotel tomatoes and jalapenos for a side dish with the point later.

                If you follow the example of our local BBQ place you slice it thin, cover it in sauce, and only sell it as sliced brisket sandwiches on a hamburger bun.
