Conclusion here...I ended up using the kiriotoshi from Japanese butcher. Was just perfect. Super easy to use, tasted great, high quality meat at same price as Wegmans shaved beef, didn't require any further cutting and people were able to bite right through it. Thanks everyone for all the help and suggestions and particularly shify and SheilaAnn for suggesting and encouraging this direction. Apologies I failed to get photos - next time!

I didn't see this until just now. I used a less expensive flank steak, sliced it reasonably thin, then laid out the slices, covered them with plastic wrap and gave 'em a few whacks to flatten 'em out. Seemed a lot easier than the quest for the perfectly thin sliced ribeye. Beefy and tender, if not the most elegant method.
