    Reheating Prime rib

Hello, yesterday we had our Christmas and my sister and her husband could not make because her husband threw his back out. Anyway we had prime rib planed and it was already in the oven and so we decided to have it with the family that was left. We had a seven pound prime rib and eat about half of it last night. It was cooked to medium rare.

so my question is how do I reheat the prime rib. This is my first time cooking prime rib.

You are going to get a bunch os SV advice and truth is that’s probably the best.
Having said that I haven’t the knowledge or equip so I go old fashioned…

If slicing for sammiches I slice then then heat in Au jus. If reheating sliced or roast I do a small fire on the kettle, wrap tight and bring it up slow. Could also do in oven if yours goes low enough.

The bad news is that it doesn’t reheat well, not in the sense that it can be eaten as “roast beef”.

The good news is that if you make a gravy, you can heat slices in the gravy and it makes the most incredible open faced roast beef sandwiches. More good news is that it is much easier to slice a roast thinly after it has been cooked, and it makes incredible cold roast beef sandwiches. Even MORE good news is that you can make insane vegetable beef soup!

That is what I did with ours. We had about 3-4 lbs left over. I sliced some of it thin for sandwiches, the next night I thin sliced some of it for hot open faced sandwiches, and the rest made fantastic soup. Waste not, want not.

Here is my method, i think it works great for reheating slices no matter how thick. Fill a frying pan half full of water and bring to a boil. Place a screen on top of the pan. I use one that is keep grease from splattering while frying. Place you prime rib on the screen and put a cover on top. I flip and it doesn't take long to reconstitute. Nice moisture heating the meat.

This was the method you posted a few days ago that I thought would work great for this!

I really believe it's the best way. Give it a try and see what you think, would be interested to see what others think.

I have made PR sammies by slicing a piece about 1/2” thick. Then GENTLY warm in the microwave just to take the chill off. Set the wave on 40% power max and just for a minute at a time. Serve on a nice rill or toasted bread of some kind. A little horseradish sauce and boom. You’re there.
