    Wet aging beef question

    I picked up a boneless rib roast for a New Year's get together. This is in cryovac, but probably not the original from the packing plant. My guess is that my local grocery store opened, cut, and repacked this for resale. The use by/freeze date is 12/29.

    My question is, should this be good in the DMF until New Year's eve? I know it is only 2 days past the date on the package, but I don't want to ruin a hunk o' meat. If this was in the original packing plant cryovac, I'd have no concerns. Thanks for any help! Click image for larger version

    What makes you think it was repack? But short answer, yes; park in bottom back where it is coolest just to be safe

      I was thinking repack because the cooler case had these roasts ranging from 3lbs up to 8 lbs, but no full size roasts. I didn't think about it until I got home or I would have asked someone at the meat counter.
