Since doing Troutman Texas Chili, stew meat, ground beef and hot sausage. You can smoke all or none. The 2 times I've made this I did not smoke any. Maybe next time which will be in the near future. I have one serving left.

Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.

Arm roast is part of the whole chuck, it's just cut perpendicular to the normal "chuck roast"
If you look at the photo of the whole chuck, the chuck roasts are cut from the right hand side of the photo (yellow lines) and the arm roasts are cut from the left hand side (blue lines).
