    Wow, nice job on a 3-buck-a-pound briskie! I bet, with the simple S&P seasoning, that the beefy taste shone through like a beacon.

    Not only did it make you feel great to have accomplished BBQ perfection, I imagine that your friend is really stoked as well. He'll want every brisket he smokes from here on out to be exactly like this one. I hope that continues to happen to both of you.

        Now I'm thinking about throwing one on this weekend for myself. Although, I have to be at the office from 9-12 on Saturday, so I'll be a little out of pocket. If he's going to be home, I might see if he can tend the fire for me for that few hours, I'm sure we'll be working on our trailer some this weekend to get ready for our smoker.

        I dunno... I'm torn. If not this weekend, I'll need to freeze that brisket that is wet aging in my garage fridge, as it'll be mid Jan before I can do it.
